European butter cold-smoked at under 90°F over apple wood for 2 full hours. Used to finish steaks, toss pasta, griddle bread, and build sauces.

Smoked Salt
Maldon flaky sea salt spread on sheet pans, cold-smoked for 1–2 hours. Stored in airtight jars. The finishing element on literally everything.

Grapeseed or avocado oil heated to 140°F, poured over wood chips, steeped 2 hours, and strained through a coffee filter. Smoke suspended in every drop.

Heavy cream poured into wide shallow pans, cold-smoked for 1 hour with occasional stirring. Used in ice creams, whipped cream, and rich sauces.

Beef marrow bones smoked at 225°F for 1 hour. Marrow scooped and blended with European butter, shallots, garlic, parsley, lemon zest, and smoked salt.

Quality bourbon infused with smoke via smoking gun for 5 minutes, sealed and rested 24 hours, strained through a coffee filter. Cocktails, desserts, gift bottles.

Dry caramel cooked to deep amber, finished with smoked cream and butter, salted with smoked salt. The finishing touch on cobblers, tarts, and ice creams.

5 lbs Roma tomatoes, onions, and a whole head of garlic, all smoked at 225°F for 2 hours, then passed through a food mill and reduced. The foundation of a dozen dishes.
